Forest Fruits Brownie

I like brownies a lot, but it's hard to find a recipe without nuts. It's also hard to find chocolate with cane sugar.

  • 110 g soft margarine
  • 200 g white spelt flour
  • 140 g unrefined cane sugar
  • 100 g cacao
  • 12 g baking powder
  • 16 g vanilla sugar
  • 2 eggs
  • 190 g Red Wine Forest Fruits Jam
  • 0.5 dl lactose-free milk


Take out the margarine ahead of time for it to get soft. If you forget it, give it 30 seconds in the microwave. Also take out an electric hand mixer. Sift the flour. I usually also sift the baking powder, because it tends to stick together. Add all the dry ingredients. If you heated up the margarine, make sure it cools down before adding it, especially before adding the eggs. Then add the jam. Add the milk gradually. How much you add depends on how much it needs. Whisk it until it has the consistency of muffin pastry.

You can pour it into a high baking dish, or use muffin tins. It should make up 24 of those. Bake at 392 F (200oC) for 20 minutes. When you take it out of the oven, let it cool under a cloth in the baking dish.
Serve it with some more jam on top.
