Homemade Cranberry Muesli Bars

This is a very healthy, and quick alternative for what you can find in the shop. Best thing of all? No raisins. Or am I the only one, who can't stand them?
Your kids will love these as well. I took some for a 2-year-old, when we visited some friends, and she couldn't stop eating them!
You can also use this as a base recipe, and throw in the dried fruits that you love.


  • 370 g apples (2 mid-sized apples)
  • 100 g rolled oats
  • 195 g unbleached semolina flour
  • 85 g unrefined cane sugar
  • 12 g baking powder
  • 12 g vanilla sugar
  • 1 egg
  • 90 g raw shelled sunflower seeds
  • 80 g dried unsweetened cranberries
  • 2 tbsp fresh-squeezed lemon juice
  • 2 tsp cinnamon


Pre-heat the oven to 428 F (220oC).

You really need a food processor for this one. If you don't have one already, get it, because it's a very useful appliance in the household. I also often use it to make grated cheese.

Pour the raw sunflower seeds into a non-stick pan. Put it on a low heat without any oil under it, and roast the seeds. Sometimes stir with a wooden spoon, but not too much. It's actually a good way to save money, since the raw seeds are cheaper than the already roasted ones.

Prepare the apples as the seeds are roasting, but keep your eye on the pan. It can burn easily. Cut the apples into smaller cubes after cutting out the seeds. Fill the food processor half way, pour in some of the oats, stir with a spoon, and then make a pure with the food processor. Repeat until all the apples and the oats are gone. Pour the whole pure into a bowl.

Take the sunflower seeds out of the pan. Make sure none are burned, as they have an unpleasant taste. Let them cool down a bit, as a lot of food processors aren't heat resistant. Pour the seeds and the cranberries into the food processor. Just give it a push, don't cut up the contents too much. When done, pour in with the apples and oats.

Add the rest of the ingredients, except for the egg. Mix them together well, then add the egg. You should get a light pastry.

Prepare a baking sheet with baking paper. Take out a tablespoonful of the mixture, and form a cookie or a bar on the baking sheet. It sticks very easily, so that's why I don't recommend forming the cookies in your hands. Bake until ready in about 20-22 minutes.
