Hungarian Meatloaf from Turkey Meat


This is a traditional dish in my family. My grandmother always made it for special occasions. However, originally it was from ground pork, which we don't eat. So I made it from turkey this time. The perfect side dish for it is the Traditional Vinegar Potato Salad.
  • 500 g turkey breast
  • ½ onion
  • 1 egg
  • 2 tbsp duck fat
  • 2 tsp sweet paprika spice
  • ½ tsp ground cumin
  • salt, pepper
  • 1 tsp garlic powder
  • ½ tbsp olive oil
  • whole wheat flour
  • 3 hard boiled eggs

You cook the eggs and remove the shells.

Preheat the oven to 428 F (220oC).

You need to ground the turkey breast. In order to do this, you cut it up into small pieces. If you don’t have a meat grinder, you can use a food processor.
You chop up the onion into small pieces.
Mix the onion, meat, the uncooked egg, the fat, the spices and the olive oil. After that, add the flour. Add enough to hold the mixture together, but not make it dry.

You prepare a loaf pan, and add half of the meat. Put the boiled eggs into the middle in a row, and then the rest of the meat on top. Lightly sprinkle flour on top.
You bake it until it’s ready in about 50 minutes.
